During Epic: the Musical I'm surprised it took me listening to Mutiny to finally get this point to click.
The whole thing about "Just a Man" keeps coming back because after everything push down, crazy thing that happens, it's always the human part of them that fails (or sometimes succeeds) them.
Polites died because of Polites desires to help Odysseus be able to relax, see the world in a better way after everything, see the possibilities of something better, greet the world and whatever it brings with open arms. The longing to be able to let your guard down.
Even after Athena's warning it's the desire to look forward and be able to hope, see something greater, something happier that everyone human has that caused the tragedy with cyclops.
Eurylochus opens the wind bag because of curiosity, because of the slight suspicion and distrust he can't help but have after Polites. Something so small yet human that makes him open the bag despite the fact his best friend of years, someone he has trusted to lead them through battles over and over again told him to not do so. Something that cost the lives of 500 of their men.
During Circe what caused them to go in her palace was hunger, need of shelter, need of home. That's what pulls them into Circe's trap, it's the exhaustion, it's the need for food, a place to call home and again be able to let your guard down.
And again in Mutiny it's hunger, exhaustion and over all confusion with everything combined with grief is what takes them to kill the cows. Even if it meant that they would never go home the complete scarceness of hope is what has them kill the cows even when subconsciously Eurylochus most likely understands that Odysseus is right.
